Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 garlic cloves, minced
  • 2 tsp dried oregano (preferably Greek)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a mixing bowl.
  2. Cut the chicken breasts into bite-sized pieces and add them to the marinade. Allow to marinate for at least 30 minutes or overnight in the fridge for deeper flavor.
  3. Thread the marinated chicken onto soaked wooden or metal skewers.
  4. Preheat your grill to medium-high heat (about 400°F / 200°C).
  5. Grill the skewers for 10-12 minutes, turning occasionally until golden brown and cooked through (internal temperature should reach 165°F).
  6. Serve with warm pita bread and generously drizzle tzatziki sauce over the souvlaki.
