  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder

Instructions

  1. Dice the chicken into bite-sized pieces. Slice bell peppers and onion.
  2. Heat olive oil in a skillet over medium heat. Add chicken, season with spices, and cook for 6-8 minutes until golden brown.
  3. Add sliced peppers and onions to the skillet; sauté for about 5 minutes until softened.
  4. Place half a tortilla in the skillet; layer with chicken mixture and cheese. Top with another tortilla.
  5. Cook until golden brown on one side (3-4 minutes), then flip to brown the other side until cheese melts.
  6. Remove from heat, let rest for a minute, then slice into wedges and serve warm.
