  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 cloves garlic, minced
  • 2 fresh lemons (juiced)
  • 2 tbsp capers
  • 1 cup chicken broth
  • 4 tbsp butter
  • Fresh parsley (for garnish)

Instructions

  1. Slice each chicken breast in half horizontally to create thin cutlets.
  2. Season flour with salt and pepper; dredge each cutlet in the flour, shaking off excess.
  3. In a large skillet over medium-high heat, melt 2 tbsp of butter with 1 tbsp of oil. Sear the chicken cutlets for about 3-4 minutes per side until golden brown. Remove from the pan.
  4. In the same pan, add garlic and capers; stir until fragrant. Pour in lemon juice and broth, scraping up browned bits. Simmer for 3-4 minutes until slightly thickened.
  5. Return chicken to the pan to coat with sauce; add remaining butter and parsley before serving.
