  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 2 cups marinara sauce
  • 9 no-boil lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with cooking spray.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant. Add chicken breasts seasoned with salt and pepper and cook until golden brown (6-7 minutes per side).
  3. Remove chicken from heat to rest before shredding it with two forks. Mix the shredded chicken with marinara sauce.
  4. Spread a thin layer of marinara sauce in the baking dish. Layer lasagna noodles, half of the chicken mixture, dollops of ricotta, and sprinkle mozzarella on top. Repeat until all ingredients are used.
  5. Cover the dish with foil and bake for 25 minutes. Remove foil, add remaining mozzarella and Parmesan cheese, then bake uncovered for an additional 15 minutes until golden brown.
  6. Let rest for 10 minutes before slicing.
