  • 1 lb boneless chicken thighs
  • 2 tbsp olive oil
  • 1 cup chopped onions
  • 1 cup bell peppers (mixed colors)
  • 4 cloves garlic, minced
  • 1 can (28 oz) San Marzano tomatoes
  • ½ cup red wine
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken thighs with salt and pepper.
  2. 2. Heat olive oil in a large skillet over medium heat. Sear chicken for about 5 minutes on each side until golden brown; remove from pan.
  3. 3. In the same skillet, add onions and bell peppers; sauté for about 5 minutes until softened.
  4. 4. Stir in minced garlic, oregano, and basil; cook until fragrant (about 1 minute).
  5. 5. Add canned tomatoes and red wine; simmer for 5-7 minutes.
