  • 1.5 lbs boneless chicken thighs
  • 2 cups long-grain basmati rice
  • 2 medium onions (thinly sliced)
  • 3 tbsp garlic-ginger paste
  • 1 cup plain yogurt
  • 2 tsp cumin seeds
  • 2 tsp coriander powder
  • 4 cardamom pods
  • Salt and pepper to taste
  • 4 cups chicken stock or water
  • A pinch of saffron threads (soaked in warm water)
  • 3 tbsp ghee or oil
  • Fresh mint and cilantro (for garnish)

Instructions

  1. Marinate chicken with yogurt and garlic-ginger paste for at least 30 minutes.
  2. Heat ghee in a large pot over medium heat; sauté onions until golden brown.
  3. Add marinated chicken; cook until browned (about 5–7 minutes).
  4. Stir in cumin, coriander, cardamom, salt, and pepper.
  5. Rinse basmati rice until water runs clear; add to the pot along with stock or water (cover by about an inch).
  6. Bring to a boil, then reduce heat to low; cover tightly and cook for 20–25 minutes until rice is fluffy.
