  • 1 lb fresh asparagus
  • 4 cloves garlic, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp raw honey
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the asparagus by washing and trimming the ends.
  2. In a bowl, whisk together soy sauce, honey, and lemon juice; add chicken breasts and marinate for at least 30 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the marinated chicken for about 6-7 minutes per side until golden brown.
  4. Add garlic and asparagus to the skillet during the last few minutes of cooking; sauté until asparagus is bright green and tender-crisp (about 3-4 minutes).
  5. Remove chicken from the skillet; add remaining marinade and a splash of water to create a sauce. Cook until slightly thickened.
  6. Return chicken to the skillet, coating it with the sauce alongside asparagus. Heat for an additional minute before serving.
