  • 8 oz pasta (penne or rotini)
  • 1 lb lean ground beef or turkey
  • 1 packet (1 oz) taco seasoning
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 1 cup diced bell peppers (red or yellow)
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté chopped onions and bell peppers until softened (about 5 minutes).
  3. Push veggies aside and add ground beef or turkey. Cook until browned (6-8 minutes), breaking it apart as it cooks.
  4. Stir in taco seasoning, garlic, and diced tomatoes with juices; mix well.
  5. Reduce heat and add cream cheese until melted, then mix in cooked pasta until evenly coated.
  6. Top with shredded cheddar cheese, cover briefly until melted (about 3 minutes).
  7. Serve warm, garnished with fresh cilantro if desired.
