  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh vegetables (e.g., broccoli or peas)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Dice the onion and mince the garlic. In a large skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (about 4 minutes).
  3. Add chicken breasts and season with salt, pepper, paprika, and Italian seasoning. Brown on both sides (about 5 minutes per side).
  4. Stir in rice, chicken broth, and cream of chicken soup until well combined.
  5. Transfer the mixture to a greased baking dish. Cover tightly with foil and bake for 20-25 minutes.
  6. Remove from oven, sprinkle shredded cheese on top, and return to bake uncovered for an additional 10 minutes until bubbly.
