  • 2 large flour tortillas
  • 1 ½ cups shredded Monterey Jack cheese
  • 2 tsp olive oil
  • Salsa or guacamole (for serving)

Instructions

  1. Preheat a skillet over medium heat.
  2. Add 1 tsp of olive oil to the skillet.
  3. Place one tortilla in the skillet and sprinkle half of the cheese evenly on top. Cover with the second tortilla.
  4. Cook for 2-3 minutes until golden brown, then flip carefully and cook for another 2-3 minutes until both sides are crisp and the cheese is melted.
  5. Remove from heat, let cool slightly, and slice into wedges. Serve with salsa or guacamole.
