  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef in batches until golden, about 5-7 minutes.
  2. Add onions and garlic; sauté until translucent, about 3-4 minutes.
  3. Stir in tomato paste before adding beef broth, cumin, and paprika. Scrape any bits off the bottom of the pot.
  4. Fold in potatoes and bay leaves; bring to a boil. Reduce heat to low, cover, and simmer for about 1 hour until everything is tender.
  5. Adjust seasoning as needed; remove bay leaves before serving hot.
