Ingredients

Scale
  • 2 lbs bone-in chicken thighs
  • 1 tablespoon fresh thyme
  • 1 Scotch bonnet pepper (whole)
  • 1 large onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (minced)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: Rinse chicken pieces under cold water. Pat dry and marinate with garlic, ginger, thyme, soy sauce, salt, and pepper for at least one hour.
  2. Sear the chicken: Heat vegetable oil in a large pot over medium-high heat. Add marinated chicken skin-side down; sear until golden brown (5-7 minutes per side). Remove and set aside.
  3. Sauté aromatics: In the same pot, add sliced onions and bell peppers. Sauté until onions are translucent (about 3-4 minutes).
  4. Create the sauce: Add water or chicken broth, brown sugar, and Scotch bonnet pepper to the pot. Stir well to combine and scrape any browned bits from the bottom.
  5. Simmer until tender: Return seared chicken to the pot. Cover and simmer on low heat for 30-40 minutes until chicken is fully cooked and tender.
  6. Serve: Dish out the brown stew chicken over fluffy rice or alongside fried plantains, garnished with fresh thyme.
