  • 6 large eggs
  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1 cup bell peppers, diced (red or yellow)
  • ½ cup salsa (mild or spicy)
  • 1 ripe avocado, sliced

Instructions

  1. Gather and prep all ingredients; chop bell peppers and grate cheese.
  2. Heat a non-stick skillet over medium heat and sauté bell peppers for about 5 minutes until tender.
  3. Push veggies to one side of the skillet; add crumbled sausage on the other side and cook until browned.
