  • 6 oz dark chocolate (for ganache)
  • 1 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased 9-inch round cake pans lined with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy. Add eggs one at a time along with vanilla extract.
  4. Gradually mix in the dry ingredients alternating with milk until combined; do not overmix.
  5. Divide the batter between pans and bake for 25–30 minutes or until golden brown.
  6. For the custard filling, whisk milk, sugar, cornstarch, egg yolks, and vanilla in a saucepan over medium heat until thickened (about 5 minutes).
  7. For the ganache, heat heavy cream until bubbling; pour over chopped dark chocolate and stir until smooth.
  8. Once cooled, assemble by placing one cake layer on a plate, topping with custard filling, then adding the second layer and pouring ganache over.
