  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare your pie crust by mixing flour and salt, cutting in chilled butter until crumbly. Add ice water gradually until it forms a ball. Chill for 30 minutes.
  3. In a large bowl, toss blueberries with sugar, flour, lemon juice, cinnamon, and salt. Let sit for 10 minutes.
  4. Roll out your chilled dough into two circles: one larger for the bottom and one smaller for the top.
  5. Place the bottom crust in a greased pie dish and fill with blueberry mixture. Cover with the top crust, cutting slits for steam vents.
  6. Bake for 20 minutes at 425°F (220°C), then reduce to 350°F (175°C) and bake an additional 30-35 minutes until bubbly and golden brown.
  7. Allow to cool completely before slicing.
