  • 2 lbs chuck roast
  • 4 dried guajillo peppers
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • ½ cup fresh cilantro, chopped (for garnish)
  • 2 tbsp lime juice
  • 12 soft corn tortillas
  • 4 cups beef stock
  • 1 tsp cumin powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Chop onion and mince garlic.
  2. In a dry skillet over medium heat, toast guajillo peppers until fragrant (1-2 minutes). Remove stems.
  3. Heat oil in a large pot over medium-high heat. Sear chuck roast on all sides until browned.
  4. Add onions and garlic to the pot; cook until translucent (about 5 minutes). Stir in cumin, oregano, toasted peppers, beef stock, salt, and pepper. Bring to a gentle boil then reduce heat.
  5. Cover and simmer on low for 3-4 hours until meat is tender and easily shredded.
  6. Using two forks, shred the cooked meat into bite-sized pieces.
  7. Warm tortillas on a skillet. Fill each tortilla with shredded birria and top with cilantro and lime juice.
  8. Enjoy your delicious tacos with a side of broth for dipping.
