  • 3 lbs beef short ribs
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C). Pat the beef short ribs dry with paper towels.
  2. In a large Dutch oven over medium-high heat, add oil and sear the short ribs until browned on all sides. Remove and set aside.
  3. Add chopped onions and minced garlic to the pot; sauté for about 5 minutes until translucent.
  4. Stir in tomato paste, then pour in red wine, simmering for 2-3 minutes.
  5. Return the short ribs to the pot along with beef broth, brown sugar, thyme, and rosemary. Bring to a gentle boil.
  6. Cover and transfer the pot to the oven; braise for about 3 hours until fork-tender.
