  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda

  • 2 large eggs
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mash the ripe bananas until smooth. Fold in the grated zucchini.
