  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

  • 1/4 cup unsalted butter (melted)

  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat melted butter and sugar until fluffy. Add eggs one at a time followed by vanilla until well combined.
  5. Gradually fold in dry ingredients and mashed bananas until just blended. Gently stir in chocolate chips.
  6. Scoop batter into muffin tins about ¾ full and bake for 18-20 minutes or until golden brown.
