  • 1 tbsp baking powder

  • 1 tsp ground cinnamon

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup unsalted butter (melted and cooled)
  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease muffin tins or line with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat eggs with milk, melted butter, and vanilla until combined.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined.
  5. Fold in the diced apples until evenly distributed.
  6. Fill muffin cups two-thirds full with batter and bake for 18-20 minutes until golden brown.
  7. Let cool for a few minutes before transferring to wire racks.
