  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup pecans, toasted and roughly chopped
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • ½ cup caramel sauce (for drizzling)

Instructions

  1. Preheat oven to 325°F (160°C). Prepare a springform pan by lining it with parchment paper and greasing the sides.
  2. For the crust, mix graham cracker crumbs with melted butter until crumbly. Press firmly into the bottom of the pan.
  3. In a separate bowl, beat cream cheese until smooth. Gradually add sugar until creamy.
  4. Mix in vanilla extract and sour cream. Add eggs one at a time, mixing gently after each addition.
  5. Fold in chopped pecans until evenly distributed.
  6. Pour filling over crust and bake for 55-60 minutes until set but slightly jiggly in the center.
  7. Allow cooling at room temperature before refrigerating for at least four hours or overnight. Drizzle with caramel sauce before serving.
