  • 1 cup strong espresso, cooled
  • 1 cup mascarpone cheese (8 oz)
  • 1/2 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 4 large egg yolks
  • 1 tsp pure vanilla extract

Instructions

  1. Brew the espresso and let it cool slightly.
  2. In a large bowl, whisk together mascarpone cheese, sugar, egg yolks, and vanilla extract until smooth.
  3. Quickly dip each ladyfinger into the cooled espresso and arrange them in a serving dish to form the first layer.
  4. Spread half of the mascarpone mixture over the soaked ladyfingers.
  5. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone filling.
  6. Dust cocoa powder generously on top using a fine sieve.
  7. Cover and refrigerate for at least four hours or overnight before serving.
