  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup low-sodium tomato sauce
  • 1 cup sweet corn (frozen or canned)
  • 1 cup fine cornmeal
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  2. Push veggies aside and add ground beef. Cook until browned (7 minutes).
  3. Stir in black beans, corn, tomato sauce, cumin, chili powder, salt, and pepper. Simmer for 10 minutes.
  4. In a bowl, mix cornmeal with water until smooth. Gradually add half the cheese.
  5. Spread meat mixture into a baking dish; pour cornmeal mix on top.
  6. Bake at 375°F for 25-30 minutes until golden brown.
