  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 34 cloves garlic, minced
  • 1 cup bell peppers, chopped (mix of red and green)
  • 28 oz can diced tomatoes in juice
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium vegetable broth
  • 1 tsp sugar (optional)
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, cook the ground meat until browned, breaking it apart as it cooks.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the chopped bell peppers and cook for an additional 5 minutes until softened.
  4. Pour in the diced tomatoes with their juices, followed by chili powder, cumin, salt, pepper, and optional sugar. Mix well.
  5. Add vegetable broth and bring to a simmer over low heat for about 20 minutes.
