  • 8 oz elbow macaroni
  • 1 lb lean ground beef
  • 1 packet taco seasoning (approx. 1 oz)
  • 2 cups shredded cheese (Cheddar or Mexican blend)
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup sour cream (or Greek yogurt)
  • 2 chopped green onions

Instructions

  1. Cook the elbow macaroni in a large pot of salted boiling water until al dente, about 7-9 minutes. Drain and set aside.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  3. Add taco seasoning and 1 cup of water to the skillet; stir and simmer for about 5 minutes until thickened.
  4. Mix in the diced tomatoes, then add the drained macaroni, stirring until well combined.
  5. Lower the heat, sprinkle cheese on top, cover, and let it melt for about 3-4 minutes.
  6. Stir in sour cream until creamy; garnish with chopped green onions before serving.
