  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In the rice cooker set to 'cook', heat olive oil and sauté onions and garlic for about 3-4 minutes until fragrant.
  3. Add diced bell peppers and cook for another 5 minutes until tender.
  4. Stir in rinsed rice, tomato sauce, vegetable broth, cumin, paprika, salt, and pepper until well combined.
  5. Close the lid and set the cooker to 'cook' for about 20-25 minutes.
  6. Once done, let it sit for an additional 5 minutes before fluffing with a fork. Garnish with fresh cilantro before serving.
