  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz spaghetti or fettuccine pasta
  • 1 can (10.5 oz) cream of mushroom soup
  • 3 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup mixed vegetables (peas and bell peppers)
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a large baking dish.
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic for about 3 minutes. Add chopped bell peppers; cook for an additional 2 minutes.
  4. Stir in shredded chicken, cream of mushroom soup, and chicken broth until well combined. Fold in half of the grated Parmesan cheese.
  5. Gently mix cooked pasta with the chicken mixture and transfer it to the greased baking dish. Top with remaining Parmesan cheese.
