Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the beets under cool water, trim the tops and tails, leaving an inch of stem.
  3. In a bowl, toss the beets with olive oil, salt, and pepper until coated.
  4. Wrap each beet in aluminum foil individually.
  5. Place on a baking sheet and roast for 45-60 minutes until fork-tender.
  6. Let cool slightly before unwrapping; skins should slip off easily. Slice or serve whole as desired.
