Ingredients

  • 1 cup farro (pearled or semi-pearled)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced, preferably seedless)
  • ½ red onion (finely diced)
  • ½ cup feta cheese (crumbled)
  • ¼ cup fresh herbs (basil or parsley, chopped)
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse farro under cold water. Combine with 3 cups of water or broth in a medium saucepan and bring to a boil.
  2. Reduce heat, cover, and simmer for 25-30 minutes until tender yet chewy. Drain excess liquid.
  3. While the farro cooks, prepare cherry tomatoes, cucumber, and red onion.
  4. In a large bowl, combine cooked farro and prepared veggies; toss gently.
  5. Add crumbled feta and fresh herbs to the salad.
  6. Drizzle with olive oil and lemon juice; season with salt and pepper before tossing again.
