  • 3 medium zucchinis (sliced lengthwise into 1/4 inch strips)
  • 15 oz whole-milk ricotta cheese
  • 1 large egg
  • 1 cup grated Parmesan cheese (divided)
  • 2 cups shredded mozzarella cheese (divided)
  • 2 cups marinara sauce
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place zucchini slices on paper towels; sprinkle with salt and let sit for 15 minutes to draw out moisture.
  3. In a bowl, mix ricotta cheese, egg, half the Parmesan, salt, and pepper until smooth.
  4. In a baking dish, spread a layer of marinara sauce. Add zucchini slices, half of the ricotta mixture, some mozzarella, and more marinara. Repeat layers ending with zucchini on top.
  5. Finish with remaining marinara sauce, mozzarella cheese, and Parmesan. Cover with foil.
  6. Bake for 30 minutes covered; remove foil and bake for an additional 15-20 minutes until bubbly.
  7. Allow to cool for 10 minutes before slicing.
