  • 1 medium spaghetti squash (about 3 lbs)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Lightly coat a baking dish with nonstick cooking spray.
  2. 2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. 3. Drizzle both halves with olive oil, then season with salt, pepper, and Italian seasoning. Massage the seasonings into the flesh.
  4. 4. Place cut side down in the baking dish and roast for 40-45 minutes until tender.
