  • 2 cups low-sodium vegetable broth
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. Thoroughly wash collard greens under cold water, remove tough stems, and chop leaves into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté diced onions and minced garlic until translucent.
  3. Stir in collard greens and vegetable broth, mixing well.
  4. Add red pepper flakes, sugar, and salt. Cover and simmer on low heat for about 45 minutes until tender.
  5. Remove from heat and stir in freshly squeezed lemon juice before serving.
