  • 1 cup unsalted butter, cold and cubed
  • 1 cup brown sugar, packed
  • 2 tsp ground cinnamon
  • 1 cup powdered sugar (for icing)
  • 4 tbsp milk (for icing)
  • 1 egg (for egg wash)

Instructions

  1. In a large bowl, combine flour and cold butter using a pastry cutter until crumbly. Add cold water gradually until dough holds together.
  2. Wrap the dough in plastic wrap; refrigerate for at least 30 minutes.
  3. Mix brown sugar and cinnamon in a small bowl for the filling.
  4. Roll out half the chilled dough on a floured surface to about 1/8 inch thick; cut into rectangles (3 x 5 inches).
  5. Spoon filling onto half of the rectangles, avoiding overfilling.
  6. Top with remaining dough rectangles; press edges with a fork to seal.
  7. Preheat oven to 375°F (190°C). Place pop tarts on parchment-lined baking sheets and bake for 20-25 minutes until golden brown.
  8. Allow to cool slightly before drizzling icing made from powdered sugar and milk.
