  • 4 cups cucumbers, sliced (about 4 medium Kirby cucumbers)
  • 1 cup sweet onion, thinly sliced
  • 1 cup granulated sugar
  • 1 cup apple cider vinegar
  • 1 tablespoon kosher salt
  • 2 teaspoons mustard seeds
  • 1 teaspoon celery seeds
  • ½ teaspoon turmeric

Instructions

  1. 1. Wash cucumbers thoroughly and slice them into rounds about ¼ inch thick.
  2. 2. In a medium saucepan over medium heat, combine apple cider vinegar, granulated sugar, kosher salt, mustard seeds, celery seeds, and turmeric. Stir until the sugar dissolves completely.
  3. 3. Add sliced onions to the brine and cook for about 5 minutes until translucent.
  4. 4. Remove from heat and add cucumber slices to the brine, stirring gently to coat.
  5. 5. Transfer everything into clean glass jars while warm. Allow cooling before sealing tightly and refrigerating.
  6. 6. Let marinate in the fridge for at least 24 hours before enjoying.
