  • 1 lb fresh or thawed shrimp, deveined
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 bell pepper, chopped (any color)
  • ½ onion, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by rinsing the shrimp and chopping garlic, bell peppers, and onions.
  2. Cook the fettuccine in boiling salted water until al dente; reserve half a cup of pasta water before draining.
  3. In a large skillet, heat olive oil over medium heat. Sauté onions and bell peppers until softened (about 5 minutes). Add minced garlic for 30 seconds before adding seasoned shrimp. Cook until shrimp are pink and opaque.
  4. Lower the heat, pour in heavy cream, and stir constantly while gradually adding Parmesan cheese until melted.
  5. Toss the cooked pasta into the skillet with the creamy sauce. Mix well to coat everything evenly. Season to taste with salt and pepper.
  6. Serve hot, garnished with extra Parmesan if desired.
