Shrimp spring rolls are a delightful treat that combines fresh, crunchy vegetables and succulent shrimp wrapped in delicate rice paper.   • 8 oz shrimp, peeled and deveined
  • 10 rice paper wrappers
  • 1 cup lettuce leaves
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • ¼ cup hoisin sauce
  • 2 tbsp peanut butter

Instructions

  1. Prepare your ingredients by washing the vegetables and slicing the cucumber and carrot into thin strips.
  2. Soften the rice paper wrappers by dipping each in warm water for about 10-15 seconds until pliable.
  3. On a clean surface, lay down a softened wrapper. Place a lettuce leaf, followed by shrimp and vegetable strips towards the bottom third of the wrapper.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to secure everything inside.
  5. For the dipping sauce, whisk together hoisin sauce and peanut butter in a small bowl. Add water as needed to reach desired consistency.
  6. Arrange shrimp spring rolls on a platter with dipping sauce and serve.
