  • 1 cup canned salmon (drained)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/4 cup fresh dill or parsley (chopped)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/4 cup onion (finely chopped)
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • Oil for frying (canola or vegetable)

Instructions

  1. If using fresh salmon, poach it in simmering water for 10 minutes until cooked through, then flake into small pieces.
  2. Sauté finely chopped onions in a skillet over medium heat until translucent (about 5 minutes), then combine with the flaked salmon in a bowl.
  3. Add breadcrumbs, eggs, herbs, garlic powder, lemon juice, salt, and pepper. Mix until combined but do not overwork.
  4. Shape the mixture into patties (about 2 inches wide) and chill in the refrigerator for at least 30 minutes.
  5. Heat oil in a frying pan over medium-high heat and fry croquettes for about 4–5 minutes on each side until golden brown. Drain on paper towels before serving.
