  • 1 lb fresh skinless salmon fillet
  • 1 cup plain breadcrumbs
  • 2 green onions, finely chopped
  • 2 large eggs
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

Instructions

  1. Finely chop the green onions and set aside.
  2. In a skillet over medium heat, add olive oil and sear the salmon fillet for about 4-5 minutes per side until it flakes easily with a fork.
  3. Once cooled slightly, flake the salmon into a bowl. Mix in breadcrumbs, green onions, lemon juice, mayonnaise, Dijon mustard, eggs, salt, and pepper until well combined.
  4. Form uniform patties (about 2-3 inches wide).
  5. In the same skillet over medium heat, add more olive oil and cook each patty until golden brown on both sides—about 4-5 minutes per side.
