  • 2 tbsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crispy bacon bits (or turkey bacon)
  • 1/2 cup sour cream
  • 2 tbsp chopped fresh chives
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub and dry potatoes, then prick with a fork.
  2. Bake potatoes for about 45 minutes until tender. Cool slightly, then slice in half lengthwise and scoop out some flesh.
  3. Brush potato halves with olive oil, sprinkle with salt, and bake cut side up for 10 minutes until crispy.
  4. Fill each skin with cheese and bacon bits, then bake for another 5-7 minutes until cheese is melted.
  5. Top with sour cream and chives before serving warm.
