Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium yellow onion, finely chopped
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • 12 empanada dough discs (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Filling: Heat olive oil in a skillet over medium heat. Sauté onions until translucent, then add minced garlic and cook for another minute.
  2. Add the Chicken: Add boneless chicken breasts to the skillet; season with cumin, paprika, salt, and pepper. Cook for about 5-7 minutes until browned.
  3. Shred the Chicken: Remove cooked chicken from heat and let cool slightly before shredding it into bite-sized pieces.
  4. Combine Ingredients: In a large bowl, mix shredded chicken with sautéed onions and garlic. Adjust seasoning to taste.
  5. Assemble Empanadas: Place 1-2 tablespoons of filling on each dough disc, fold over to form half-moons, and crimp edges with a fork.
  6. Bake: Preheat oven to 375°F (190°C). Brush empanadas with egg wash and bake for 20-25 minutes until golden brown.
