Ingredients

Scale
  • 8 oz fettuccine
  • 1 lb large shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare your ingredients: Chop the garlic and set aside.
  2. Cook the pasta: In a pot of salted boiling water, cook fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. Sauté the shrimp: In a skillet over medium heat, melt the butter. Add shrimp and cook for 3-4 minutes on each side until pink and opaque. Remove from skillet.
  4. Make the sauce: In the same skillet, lower heat and sauté garlic until fragrant (about 30 seconds). Pour in heavy cream and stir well.
  5. Combine: Gradually add Parmesan cheese until melted into a smooth sauce. If too thick, add reserved pasta water to achieve desired consistency.
  6. Toss & serve: Add cooked fettuccine to the skillet with shrimp and sauce; toss gently to coat evenly. Garnish with chopped parsley before serving hot.
