  • 1 lb fresh cod or haddock fillets
  • 4 slices bacon, diced
  • 1 medium sweet onion, chopped
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 4 cups fish stock or broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook diced bacon until crispy. Remove with a slotted spoon and set aside.
  2. In the same pot, sauté onion, celery, and carrots for about 5 minutes until softened.
  3. Add diced potatoes and fish stock; bring to a gentle boil while stirring occasionally.
  4. Once potatoes are tender, add the fresh fish fillets and cream. Simmer for 5-8 minutes until the fish flakes easily.
  5. Stir in crispy bacon, fresh herbs, lemon juice, salt, and pepper before serving.
