  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 4 cloves fresh garlic, minced
  • 2-inch piece fresh ginger, grated
  • 1 large onion, thinly sliced
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp korma spice blend
  • 1 cup plain yogurt
  • Salt & pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cut the chicken into bite-sized pieces. In a bowl, mix yogurt, garlic, ginger, salt, pepper, and half of the korma spice blend. Coat the chicken thoroughly and let marinate for at least 30 minutes.
  2. Heat oil in a large skillet over medium heat. Sauté sliced onions until translucent (about 5 minutes).
  3. Add marinated chicken to the skillet and cook until browned on all sides (about 7 minutes).
  4. Pour in coconut milk and any remaining marinade. Simmer on low for about 20 minutes until the chicken is tender.
  5. Stir in the remaining korma spice blend and adjust seasoning if necessary.
  6. Garnish with chopped cilantro and serve hot with rice or naan.
