  • 400g spaghetti
  • 150g pancetta, diced
  • 4 large eggs
  • 100g freshly grated Parmigiano-Reggiano cheese
  • Freshly ground black pepper (to taste)
  • Salt (for boiling pasta)

Instructions

  1. Prepare salted water in a large pot and bring it to a boil. Cook spaghetti until al dente according to package instructions and reserve some pasta water before draining.
  2. In a skillet over medium heat, sauté pancetta until crispy and golden brown.
  3. In a bowl, whisk together eggs and grated Parmesan until smooth. Season with black pepper.
  4. Add drained spaghetti to the skillet with pancetta and toss over low heat to combine.
  5. Remove from heat, then quickly pour the egg mixture over the hot pasta while tossing continuously to create a creamy sauce.
  6. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached. Serve immediately.
