  • 1 can (14.5 oz) diced tomatoes, no added sugar
  • 2 cups spinach or kale
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add 2 tbsp olive oil. Once hot, sauté onions, carrots, and celery until softened.
  2. Stir in minced garlic along with thyme and bay leaf; cook for an additional minute until fragrant.
  3. Gradually pour in the vegetable broth while scraping up any bits from the pot. Bring to a gentle boil.
  4. Add diced tomatoes, zucchini, and green beans. Season with salt and pepper; cook for about 15 minutes until veggies are tender.
  5. Stir in spinach or kale until just wilted; taste and adjust seasoning if necessary.
