  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 2 medium Yukon Gold potatoes, diced
  • 4 cups vegetable or beef broth (low-sodium)
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté onions, carrots, and celery until softened (5–7 minutes).
  2. Move veggies to one side and brown the ground meat on the other side until fully cooked.
  3. Stir in minced garlic, thyme, and rosemary; cook for about 1 minute until fragrant.
  4. Add broth and Worcestershire sauce; bring to a boil before reducing heat to simmer for 15 minutes.
  5. Incorporate diced potatoes and frozen peas; simmer until potatoes are tender (10–15 minutes).
  6. Taste and adjust seasoning with salt and pepper as needed. Serve hot with crusty bread.
