  • 4 cups low-sodium vegetable broth

  • 1 tsp coriander
  • Juice of 1 lemon (about 2 tbsp)

Instructions

  3. Stir in rinsed red lentils and vegetable broth. Bring to a gentle boil.

  5. Blend the soup until smooth using an immersion blender or regular blender. Adjust consistency with extra broth if needed.
