  • 1 medium sugar pumpkin (about 2 lbs), peeled and cubed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the pumpkin by cutting it in half and scooping out seeds; cut it into chunks.
  2. In a large pot over medium heat, drizzle olive oil and sauté chopped onions and minced garlic until translucent (about 5 minutes).
  3. Add pumpkin chunks and vegetable broth; bring to a boil then reduce to simmer for about 20 minutes until pumpkin is tender.
  4. Remove from heat, let cool slightly, then blend until smooth using a blender or immersion blender.
  5. Return blended soup to the pot over low heat; stir in coconut milk, cinnamon, and nutmeg. Warm through for about 5 minutes.
