  • 2 lbs beef chuck roast, cubed
  • 4 large carrots, sliced
  • 3 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop vegetables and season beef with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides, then remove from pot.
  3. In the same pot, sauté onions and garlic until translucent.
  4. Add the seared beef back into the pot along with beef broth, tomato paste, thyme, and bay leaves. Stir well.
  5. Bring to a boil, then reduce heat and cover. Let simmer for 1.5 to 2 hours until beef is tender.
  6. About 30 minutes before serving, add diced potatoes and carrots. Cook until fork-tender.
