Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 1 cup wild rice
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup heavy cream (or half-and-half)
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. 1. Season the chicken breasts with salt and pepper. Heat olive oil in a large pot over medium heat and sear the chicken until golden brown on both sides (about 5 minutes per side). Remove and set aside.
  2. 2. In the same pot, sauté onions, carrots, celery, and garlic until softened (approximately 5 minutes).
  3. 3. Stir in wild rice and chicken broth; bring to a gentle boil then reduce heat to low. Simmer until rice is tender (40-45 minutes).
  4. 4. Shred the cooked chicken into bite-sized pieces and return it to the pot along with heavy cream. Stir to combine.
  5. 5. Add thyme and bay leaves; taste and adjust seasoning before serving.
